Drain them, then dry them well. I spread them out on a wire rack over a baking pan and blotted them dry with paper towels. Blackstone was on medium heat. I brought oil out with me, but had plenty of bacon grease so made use of it. Fries in bacon fat, what more could you ask for. Cook until desired doneness. Salt and pepper as you go. I had thoughts of using a bag of frozen fries I had on hand, then just said the heck with it, I'll make my own from scratch.

Love using it, a great addition to my cooking arsenal. It's fast, it's convenient and is a lot of fun to use.
Pancakes, eggs, stir fry, burgers, salmon, flatbread pizzas, etc. But especially bacon! No smell in the house, no grease to wipe down and it helps with seasoning. My only complaint is I go through a lot of propane but I do use it 3 to 4 times a week. I could do some of these cooks on a CI griddle using one of the Kamados, but waiting for charcoal to come to temp, trying to regulate temperatures and the smaller surface area makes the Blackstone the sensible choice.
