Catering a buddy’s wedding

Hi all,
I’ve been asked to cater a buddy’s wedding in a month (mostly because of the awesome skills I’ve picked up here on the Brethren site!).
Having never cooked for so many at one go I’m hoping for some sage advice from those who have.
There are 70 guests, an 18’ baron of beef roast, I proposed Costco chicken thighs( bone in skin on) marinated in Italian dressing, and a couple of salmon. (We are on the west coast of the great white north after all!)

Was wondering how much beef/ chicken per person I should budget for.
I’ve been given a big gasser to use. I have a UDS I could bring up( it’s out of town) if it were necessary.
Any input would be really appreciated.

Can't help with the chicken. Are you smoking the beef? If so, figure 1/3 lb per person (also assuming sides and rolls), and that it means 2/3lb trim weight.
 
How will the roast beef be served On a bun or sliced and plated? For sandwiches, I'd figure 6oz pp and 8-10oz for plated. Chicken I would get leg quarters and cut to drumsticks and thighs and cook 1 piece per person so a total of 35 quarters cut in two for 70 people (maybe add 10%).
