Broke in the new pan this evening with a little Pork/Chicken cook for Taco Tuesday!

OK I'm intrigued by the Comal after seeing two recent cooks. Hopefully one of our Brethren will step up and post a tutorial on Comal technique... Such as setting up the burner, proper distance from Comal to burner, cooking temp, proper oils, etc.

Very nice. The misses will kill me if I order another pan. Will have to come up with something with my plethora of CI pans that will hopefully match this deliciousness!

I agree with JR. It's just a pan!
The center of the comal sets over the heat so I do the cookin' there and scoot everything to the sides when finished, to keep warm. Use your favorite oil for frying. Raise and lower the flame as needed.. depending on what food your cooking.
Most important thing is to have fun!
