It will probably take a little life expectancy away from the center grate, but it allows the chunks to smolder and smoke vs just burning up quickly right on the coals.

I was going to build or order the Vortex until I tried the Weber charcoal holder. First time cooking wings on the kettle and I think it turned out well. Just rubbed some seasoned salt on the wings. Nothing else and no sauce.

The one I made from a 3qt stainless bowl from Costco still performing great. Lots of use, no rust or warping. 4 1/2 inches high makes it just shy of grill bottom on Weber 22 grill. Everything is excellent using it, I now ask the wife, Vortex chicken or regular way. Always Vortex gets the vote.

I've been using my medium Vortex for well over a year with no ill effects on my center grate. The Weber gourmet system grates are much heavier than their standard grates so I think they will take the intense heat quite well. The wood chunk will flame a little at first with the lid open but they settle down and smoke when you put the lid back on.

The Vortex is awesome. Ploughboy's Yardbird on Thighs and Wings. Works like a charm. This is the small one on a 22.5"
