I rarely get a chance to participate in these since I'm usually off on Fridays but I decided to head in for a couple hours and bring some rib tips. These were extra packages I had from Labor Day sitting in the freezer.
I cubed the rib tips in advance, which I now know is a mistake. Some of the smaller pieces did not pass the QC because it couldn't handle the initial 2 hour smoke.
Another thing was the rub.. I dry brined it Wednesday overnight with salt and yesterday before heading to work I dusted the rub so it could marinate in it. The end result barely had any bite to the bark compared to dusting them right before tossing them on the smoker.
Overall quite tasty. It's going to pair with someone's cornbread pudding so we'll see how it goes. Thanks for checking.
