Hello all, Slime checking in here from Kensington, MD.
I'm relatively new to smoking, been putzing around on extremely cheap equipment for a few seasons and then on a converted Weber Kettle for the past year or so before I converted to the big dog pictured below. She's an offset, reverse-flow beast who I'm still trying to get to know. Produced a few decent cooks and a few unmitigated disasters, and am really joining for some guidance on keeping my temps steady and fire management. Not the easiest on such a large apparatus.
Anyway, looking forward to learning and sharing with you all. Also attached is a pic from my last cook, some big ol' dino ribs.
