Not much to it. At least how I do it. Just cut up some taters. I like to make various lengths and thicknesses because I like both crisper and not so crispy - that way I don't have to make up my mind. Fry them in peanut oil and sprinkle on a little kosher salt and Babineaux's seasoning. Nothin' to it. But still pretty good.
