This looks excellent. Still haven't tried beef ribs, but I need to. I know there are many different types of beef ribs, what are this kind called?

These were Chuck plate ribs. They are what short ribs come from, but were in cut.

Mayo, sour cream, chipotle in adobo, salt n pepper and a shot of lime juice. Throw it in the ninja and blend.
