Default Pot Roast Kicked up a Notch

I was looking to utilize some stuff from the frig and pantry that were getting to the point of expiration. Ended up being some potatoes and veggies. My thought was to pull a roasting chicken or pork roast from the freezer. Ended up finding this forgotten nugget of goodness.


Not a chicken but it will do in a pinch.


Seasoned the beef.


Seasoned the veggies.


On to a 350 degree Kamado until reached an IT between 125 and 130 degrees.


Sunday dinner.
