Gobbler Cakes.
I had some leftover smoked turkey with lots of trimmings left. I used 2 cups of diced turkey. 4 cups cooked turkey stuffing. 1 cup dried cranberries, 2 eggs, and a little mayo. Mixed well and patted out. Crushed corn flakes for the crust. Fried and topped with creamy mushrooms. I two and my son had four. They were great, like Thanksgiving in every bite. Thanks for looking.

That's a great idea and they look darn good to boot. My usual go-to options for leftover turkey are the usual suspects: soups, pot pies, chili.

Looks great. Didn't hurt that you cooked in cast iron either... :-)
