I'd imagine a beurre blanc would be great with scallops. Would add richness but still let the taste of the scallop shine

I've done a balsamic reduction sauce with bacon-wrapped scallops in the past that seemed to get pretty good reviews...

A chimichurri can be delicious especially when the guys dont hit the bullseye like you did.

We also use a Chipotle Lime Butter with some prickly pear syrup.
