My go to is Carolina Red from the classic 'smoke and spice' book. super quick.
1-1/2 cups apple cider vinegar 1/2 cup ketchup 1/2 teaspoon cayenne or red pepper flakes 1 Tablespoon sugar 1 teaspoon table salt

Nope. It is all cooled, fat skimmed, and poured back into the meat at my house. That would be good for a sauce addition though.

I think that's pretty standard. maybe not directly to the sauce but definitely mixed back into the meat.
