besides tacos or sandwiches, what else do you guys make using up leftover brisket? any type of stew or other dishes?

was wanting to try something new and get my family to eat up all these leftovers.
 
My favorite is brisket quesadilla.
 
Mac and cheese is good with brisket.
Chop it and add it to your favorite beans.
Brisket is really good in tamales
On nachos

Oh, and in chili
 
Popular use of leftover brisket is chili and Brunswick stew. Brisket and eggs is also good for breakfast. You can also add it to instant ramen.

If you're feeling little adventurous and want something more exotic, you could eat it as ssam. This is how I normally eat leftover beef brisket and pulled pork meat. Ssam is basically eating meat wrapped in lettuce or leaves. It's popular way to eat Korean BBQ. David Chang's Momofuku restaurant serves Bo Ssam which is basically roasted pork butt eaten in a lettuce wrap. yep, excellent ideas.
I will be doing chili on the next one for sure, and may have to take a stab at the shepherd's pie.
Think I might just do some baked potatoes tonight.

I was going to say chili, but.....

25% chopped brisket 75% Ground beef patties

Makes excellent “chop house” burgers

But chili, for sure.

Chopped brisket green chile grilled cheese sandwich
 
Some of the best nachos I've made were from brisket leftovers.
