Malcom Reed's recipe. But I decided to take it a step further and inject the breasts with a "creole butter". Malcom does that for full birds, but doesn't include it in his tutorial for smoking breast meat only.

Looking forward to this meal, as I haven't made these for quite some time.

Progress report:

Had to turn down the set temp on the Flame Boss, as these bad boys were cooking too fast. Nothing wrong with that, except for the fact that I am taking one to someone else for their dinner, and they requested a specific dropoff time. I want it to be hot when they get it, so trying to time it right. More photos to follow.
 
Thanks Bill. I hope so. I've made them 2 or 3 times previously, and we really liked them. Believe it or not, I tried to give some away once, and the person I gave it to forgot to take it and left it in a hot car all day. It had to be thrown away.
