Thumbs up Green chile and cheddar sausage

Seriously. I thought I had a bunch of pictures. Lots of pics. But no...
So, I'll enter the sausage throwdown with just a few pics. After all the sausage was pretty great

As you would expect, I ground up a pork butt that I scored for $.97/lb.


And stuffed the links. Sausage was obviously (by the title. Not the pics) seasoned with roasted hatch peppers and cheddar cheese.


But then this happened.
I rolled a fatty with more of the roasted chile and some smoked pepper jack cheese. Smoked on the Weber with cherry wood.


Then sliced and served with eggs.


I love breakfast for supper
