For the Freezer Dive Challenge I have briskets, ribs, butts, and loins.
And I went with bone in skin on chicken breasts...WTF? Dusted them with Q-Salt and smoked em on the kettle with peach wood. While they rested in the house I roasted some garden produce. Jalapenos and Roma tomatoes. Then some ripe bell peppers. Next I fried some bacon and crisped up the skins from the chicken. Also mixed up some cornbread stuffing. Then I stuffed the roasted bell peppers with the chicken, jalapenos, tomatoes, and some red onion. Also just a bit of ranch dressing. Just because. Topped all this with the bacon, the chicken skin, and some Parmesan cheese. Since the roasted peppers are a bit limp I brace em up with the CB stuffing. On the grill to bring to temp with a bit more peach smoke. And this was my first serving of the finished product. So that gets the chicken breasts out of my freezer. I was going to say if you cooked all that at one time, hands down a win for sure. To be honest, I don't blame you for saving those bigger and more expensive cuts because that stuff is just going to be more valuable as the prices keep going up, so the chicken was probably a very smart decision, and looking at the results, I agree 100% with you! Great cook, and I love anything that includes peppers!
