Doing some pig shots (filled with mix of chipotle seasoning, cream cheese, sharp cheddar, and chopped green chiles), peppadew peppers (filled with goat cheese), 3 pork chops with different rub on each (buttrub, Big Mo championship, plowboy yardbird), and a piece of boneless pork loin (going to use it for cuban sandwiches). Local Sam's had a great deal on pork chops yesterday. Put about 14 lbs. worth in the freezer; $1.58 per lb. The three I'm cooking today were the worst ones out of two packs.

Dang man! It looks like the mad scientist in you has surfaced. My money is on everything tasting excellent, and if you need a second opinion, let me know.

Dang. I thought my Saturday cooking a brisket was a big to-do. You take the cake. Love the experiments you're on about. Please report back when it's all said and done.

Everything turned out great! Cuban sandwich was real good. Will be doing more pig shots and peppadew peppers for a football party next Saturday. Peppers were filled with goat cheese and finished with a balsamic glaze. Pig shots were done with pre-cooked Hormel bacon from Sam's; I also use it for my ABTs instead of having to wait for raw bacon to cook. Pork chops will make a great pre-smoked dinner this coming week.

Everything looks really good. I like the idea of the precooked bacon. Did you notice much of a difference in the final product?

I really like using the pre-cooked bacon. I find that the Hormel black label I get from Sam's is thinner than what Costco has and the thinner bacon works better. I have used it on ABTs for years with good results. First time trying pig shots, but will be doing more of them.
