I was in Costco the other day and spotted some fresh wild pacific Coho salmon. I HAD to have it! Salmon is my favorite fish and Coho my favorite of that.
Cooked it up in the kettle indirect with some hardwood lump and no smoking wood. The fish was seasoned with a little kosher salt, black pepper, touch of garlic, in a bath of butter and soy sauce topped with some lemon slices.
Served with fried rice, Asian chopped salad, and steamed carrots glazed with soy, butter, ginger and some brown sugar.
Sorry about the crappy plated pic. I forgot all about taking that one until we had already started eating.
