Personally I Don’t necessarily subscribe to the get the biggest you’ll think you could possibly need- then get one size bigger. I’m more of a buy the biggest you’ll use most-then buy two.

How about a meadow creek bx50? I'm just south of buffalo and I have the stainless cooking chamber, 3500 and their is a distributor in Buffalo somewhere. I got mine in himrod, nice drive and great people.
 
Was looking at the STLbbq site and pricing. The largest option was patio model with 3 racks (6", 5", 3.5 inch spacing) and a 2 rack warmer, how much meat could I load up on this thing? My concern is that I may have to upgrade even bigger eventually, but that's a ways away.

I ran 6 large packer briskets on my two rack model that thing is huge, Shirley cabinets are a game changer compared to cylinder designs those cooking grates are 21" deep by 32" wide.

This would potentially be a good option. The stainless cooking chamber would help with permits probably, and Meadow Creek makes top notch cookers. It might not have the capacity you're looking for though.
 
You can buy 4 briskets and come cook on the BX if you want to try it out, less than a hour from Buffalo

capacity is indeed the issue. It's a good looking cooker though
 
Can easily fit 6/8 briskets at a time, also can do 16
8/10 lb butts that would be a little tight but it will fit
 
My large LSG Insulated Cabinet has four grates, and I "could" fit four packers per grate if I ever needed to do that many at one time. They are engineered and insulated well enough, it would probably run better in your cold climate than it does in hot Texas weather.

Im taking a hard look at their ultimate patio, kind of like a swiss army knife of smokers. Offset Reverse with Vertical cab that can be warmer or smoker and for the price seems legit.

i am also taking a hard look at the ultimate patio from them , have talked to chris a couple of times , he said he could also fab it up to smoke in the vertical while you can grill in the main chamber at the same time , also the main chamber is actually 5' or 60" length ……

Do you have the 8" wheels? As far as add ons anything you see is a must? I would think at least an extra rack placement at the top and grate.
 
I don't know why you wouldn't consider a GF, it seems it would be the perfect cold weather solution. Assassin Smokers and Grills in Macon GA by far the best bang for your buck. Look at thier Grill/smokers also 36" all the way up to 72" with insulated doors, they are really good at grilling and smoking (with the V-pan). If you want a stick burner Bubba Grills in Haddock GA builds a great reverse flow, don't think they have but a 6-8 week wait.

I had the 8" wheels on the stick burner i bought from them. Work great if you are rolling across concrete. For my cabinet, I bought all terrain no flat tires. Rolls better over hard ground, but will still sink into soft soil and you'll need to use boards to roll across:

I added the folding table to mine, but that was before they came out with the cart version of it. If I had the choice now, I'd get the cart for the table top and the storage underneath.

I paid for two ball valves, but rarely open the second one.

Of course, you'll need to order a bottle opener and have it sent to Chris so he can install it for you.

As for grates, I had an extra slide put in near the top. I only use it when I want to take one grate out of the way.

Here is everything I ordered from Chris:

Insulated Vertical Smoker
Stainless steel side folding table 24"x 20"
Stainless steel handle
Tie down rings
Insulated smoker T-plates
Heat diverter plate
Brass Ball valve 2"

I believe the diverter plate comes standard now. I bought the T-Plates for the firebox (they are supposed to help guide the fire through the firebox), I seasoned them up, put them in a trash bag, and stored them in the garage. I have never used them. A couple months back, I had a buddy weld up a form that works great for me. Image below.

you will love it, I have never owned or cooked on one but I can tell by looking that the quality is top notch and not to mention that everyone that owns them loves them . congrats
