Question Anyone ever smoke brats?

if so, do tell! last summer, i ate dozens of them

this summer, now that i've got the smoker, i have my eyes set on bigger slabs of meat. however, i do love my brats.

I've got 26 pounds of meat prepped for today's cook (OCD mod) and after re reading that thread I want brats too. Good find Tim.

It is hard to beat a beer simmered & grilled brat, but I smoke all types of sausages from brats to hot links with good results. Time is usually 2 to 3 hours. When I stuffed these, I made the links just long enough to fit on my home-made rack. I usually stay away from curing agents, so my smoked ones are not as "traditional" as some of the cured kielbasas and such.


They will take color well and will plump up real nice. When you take them out of the smoker, the casing can shrivel, this can be stopped with a quick dunk in iced water.
