Last weekend we had 15” of snow. I offered to plow my neighbors driveway as he was at work and his wife and kid were only ones there.

He works as the USDA inspector at the local meat processor.

Today he brought me a whole skin-on pork shoulder (~21lbs) as a thank you.





It was slaughtered on Monday and has not been frozen.
It’s hitting the smoker tomorrow.

It is a good score. Unless one slaughters their own livestock, that kind of freshness is hard to come by. It may just be my imagination, but I think those super fresh cuts retain moisture better. Looking forward to after cook photos.

That is a deal I can relate too. A whole shoulder carries a lot of weight in my book. Keep that connection at all costs.

My next-door neighbor, 30 years my junior, helped clear my driveway last year and we repaid the favor with a few extra goodies from my smoker.

That is a yardstick in the drift we were working on.
