Mustard…

I used to eat mustard most of the time on all sandwiches and burgers.

Started trying Dukes about 2 yrs ago, Hellmans before that.

Recently tried blue plate for the first time and my wife still prefers dukes …so dukes it is.

I switched from mustard to mayo almost overnight burgers and sandwiches.

30 years ago though it was miracle whip.

Have any of youse guys ever tried Sauers mayo? It ain't bad. Probably more vinegar flavored than the others.
Blue Plate is still king of the hill to me.

Very possibly similar or the same as Duke's. Sauer has owned Duke's since 1929.

I've become a fan of Duke's and Kewpie mayo but will eat most brands.
Something I have not seen mentioned is Duke's does not have any sort of sugar/sweetener in it.
Be aware there are two types of Kewpie mayo. There's the original import and a U.S. made version. If you try any make sure you buy the import version that is in a squeeze bottle packaged in a bag.
Blue Plate not only makes their brand of mayo but they also co-pack other brand names of mayo. An ole buddy of mine used to infrared inspect electrical devices and saw them running different brands on different production lines at the same time.

The twang refers to acid. Dukes contains more ingredients that are acidic like lemon juice for example. Once the acid is in place you can add more salt, fat, sweet and flavorings to kick up the volume. Dukes is for sure "kicked up".

I grew up on Blue Plate (in my 60's now). Tried my first jar of Dukes last week. It's sort of like Blue Plate with a little more egg yolk IMO. But Dukes is like twice the cost of Blue Plate around here.
