Default Bacon Jam- from The Skillet in Seattle

Anyone catch "Meat and potatoes" on foodchannel last night? They featured the burgers from The Skillet out in Seattle, and he showed how he made a bacon jam.

I cant remember all of it, and when you look up their website they are of course very vague. The gist though is to render some bacon lardons with diced vidalia, add some balsamic vinegar, and simmer for a few hours then puree. I cant recall what else is in there, I can only assume garlic, rosemary? maybe some dijon and sugar.

So I want to make a first attempt at this tonight, has anyone ever made something similar or have any links or further suggestions?
