Default hot and fast bird

Sorry no pics. I loaded the assassin 36 with some KBB and hickory chunks got to 450 deg. 15 lb.
Spatchcocked bird injected with 2 cups chicken stock and sweet bbq rub from Aldi placed in pan and put in for 1hr. Temp fell to 330 and added more KBB and oak temp rose to 390 after another 1hr. bird was at 165. Opened all vents and let ride for 15 more minutes. Pulled after 15 minutes and rested for 20 minutes then wrapped in foiled and placed in oven on warm for 1 hr.

Well another 2hrs. was my best smoked turkey yet!! Crispy skin and tender as can be.
