In Texas, porksteaks less common than bigfoot?

Since moving to texas, from Mizzory, it has been a slight hassle finding any pork steaks to cook in larger quantities than 4 (that was the only pack at a store that actually had them on the shelf) on a whim. Went to three places before I could get some. The first place would not open a cryovac shoulder to cut any. The second had the same deal. The third had shoulders they could cut. You can get loins and chops easy but not pork steaks...:crazy:
 
Not common - Beef State (but don't try to find a TriTip :shock:) Go to HEB or Albertsons - they still cut some meat......... or just cut up a Pork Butt yourself.......... Some HEB or Albertsons will order you some cuts

when did you move to TX.? Coming to the Bash if Corona ever goes away.?

I never really saw them in my part of Texas until the virus hit. As soon as that happened they decided to start sawing butts into wafer thin slices and selling them in packages of two for $5-$6. Threw an extra couple of bucks on beef per pound too.

Thanks! I went to old town meat market and it was pretty high priced. I have never had to ask the butcher to cut them before.

We moved down the end of May. If the Covid situation improves, I would really like to come to the bash for sure. We will see...
 
Really? I have had pork steaks cut at H‑E‑B and Kroger. I have a meat market near my house that does it as well. HEB and Kroger will have them in the meat case as well but that is hit or miss. So much for that broad stroke generalization.

Needing them cut is why I say they are rare to see. I have never needed to ask to have them cut before Texas, because they were always everywhere. I know that my bro-in-law (from Missoiri) taught someone who was a texas native after saying "this is the best steak I have ever eaten" that he was enjoying a pork steak. It is just weird!!
 
That brings back a funny memory for me. I'm from Missouri and was doing a project south of Houston near Galveston when my superintendent and I were preparing for a safety BBQ. Walking through the meat department at Sams, grabbing brisket, some hamburger, a few dogs and I grabbed some pork steaks He gave me the worst look and asked what the hell was I doing. Made it very clear that pork steaks was not allowed on any real Texans' grill!

The only time that I've had pork steaks was when I went to Snow's with Gore. Greg (gtr) told me to be sure and get one and I'm glad I did.

Haven't found many pork steaks in my area which is a shame. Mighty fine eating.

what I call st Louis style pork steaks are one of my guilty pleasures in bbq and a goto when i want to impress a guest who claims to not like pork chops.

seared, braised in bbq sauces and caramelized on a hot grill...cant be beat
 
All it is,is country style ribs cooked in whole slabs instead of sliced into small portions.Yummy eats,but nothin special.
 
Is this what Underwood’s in Brownwood TX served in those metal trays simmering in sauce?
 
Raised in Virginia, Moved to St. Louis and discovered pork steaks. Never heard of them before. Loved them. Moved to South Texas, couldn't find them. Have the butcher slice up a pork butt - your good

Pork Steaks
Ingredients:
4 large Pork steaks, 1 1/4" thick
3 T Kosher salt
1 ½ T Black pepper, ground fresh
2 t Granulated garlic (not "powdered")
16 oz. Beer
18 oz. barbecue sauce

Directions:
Combine the salt, pepper and garlic in a small bowl and mix well.
Season both sides of each steak liberally with the seasoning, then place them in zip-top bags and refrigerate at least three hours, or overnight.
Start your grill and prepare for direct cooking over high heat (450-500º).
Sear the steaks on each side.
While the steaks are searing, combine the beer and barbecue sauce in a large bowl and whisk to combine.
Put the steaks in a single layer into the disposable aluminum pans and cover them with the beer mixture, putting half of the beer and barbecue sauce mixture into each pan.
Cover the pans tightly with foil.
Move your coals to one side of the grill for indirect cooking.
Put the pans on the side of the grill opposite the coals and cook, indirect, for 90 minutes.
Add charcoal as needed to keep the temperature at about 350º throughout the rest of the cooking time.
Remove the steaks from the pans and quickly sear them over direct heat (about 2 minutes per side).
Remove to a platter and let rest for about five minutes.

If they got pork butts, and you got a knife...well, it ain't brain surgery, lol

I think it would be a challenge to cut through the blade bone with a knife :-D

They can be hard to find in the Chicago area, too, and is you do find them, they are thin cut. A lot of places here call them Pork Shoulder Blade Steaks.

As mentioned above, Pork Steaks are more popular in the St. Louis area. A couple of years ago we were heading to Collinsville, IL, near St. Louis for a steak cook off, and they had a pork steak side category. I had never cooked one so I talked to a BBQ friend in that area and he gave me some tips. I had to have them special cut and per the rules they had to be less than 1 1/2" thick, so I told the butcher to set the saw at 1 1/2", and cut two center cut steaks.

I treated them pretty much like ribs, doing a variation on 3-2-1, and they came out great!

We ended up taking first place! Some of the St. Louis rea guys weren't happy that a Chicagoan came down and beat them in their local specialty :-D

Easy to get pork steaks anywhere in TX. At your local grocery grab a bone in butt, walk over to the meat counter and ask him to cut into 3/4" to 1" steaks. I have the guys at Tom Thumb do it all the time. They don't even charge me anything.

What did you braise them in Ron L? Just BBQ sauce, or did you do the butter, brown sugar, honey treatment?

Yeah, certain cuts across the board have been a little weird throughout the whole covid thing so that is probably part of it. But pork steaks, some times labelled as country style ribs in these parts is not too hard to find. Or at least shouldn't be. But any butcher worth his salt will slice them exactly the way you like.
