Default Building advice

I have been commisioned to build a smoker out of a 300gal propane tank. It will be used for fund raising for our local hospice. all I have is the tank and the axles. After the meat is done I need to keep it warm so the health dept will stay happy. If anyone has any ideas or advice I would be greatful.
