I finished this off last night. I am really pleased with it. I will definitely make this again. The thigh meat makes for a much better texture than any chicken sausage I have ever tried. Next time I will probably use boneless, skinless thighs and just wrap in bacon to simplify things. (This TD was a lot of busywork.)
