Father's Day brisket cook underway

Well, actually, brisket flats which was all Costco had today. Couldn't believe the price either but it was what I felt like cooking so I went ahead a bought a couple. Both seemed pretty decent. A little under 8 lbs, decent thickness and fairly floppy.

I was tempted to do one overnight on the Rectec and the other tomorrow morning on my 26" kettle to try to compare them but my daughter reminded me that I have a couple things tomorrow morning early so I'd be pushing it to try get the kettle to temp and the second one on. Decided to play it safe and put them both on the pellet.

One with SPOGOS and one with Black Ops

Big fan of both spogos and black ops. Haven’t done a brisket with spogos yet, how was it? Which did you prefer?
 
Glad I didn't try to do the side by side, a bit of chaos ensued on the day.

Started the brisket at about 11PM and went overnight on the low setting on the Rectec. Bumped it to 225 in the morning and wrapped them in butcher paper a couple hours later. Pulled them later in the afternoon and held them in a cooler until dinner, about 7:00

I have no idea how the SPOGOS one turned out -- it ended up going straight into the fridge. The Black Ops one was decent -- I think I pulled it a little too early. Not bad but probably could have used another 15 minutes -- half hour.

For the record, the Irish whisky was, however, fantastic!
 
Ah yes. Redbreast. Very nice indeed. Everything looks great!
