Default Game Day Grub w/PrON

So, my son came home from school this weekend, so I decided to give him a bit of home grub (anti-cafeteria food) while we watched the games today. This weekend's menu starred a two-bone beef rib roast.

Seasoned with Kosher salt, Black Pepper and then a healthy dusting of Bovine Bold. Reverse seared on the Yoder (Pecan smoke at 225* until IT of 120). Thirty minute rest and then finished on the BGE (10 min at 550*). Rest for 20 min and then slice. A little creamed spinach and creamed corn for sides. He had two portions
