Breaking in the new flat top with a small batch of fajitas. Got the marinade recipe from Chef Johnny’s TExas Style BBQ and Cuisine (YouTube).

I liked it. Think I used a little too much cilantro for the small amount of meat I cooked. Probably try and add a little more “kick” to next version.
