Chicken & Sausage Gumbo for Cold Weather!!!!

All right! The recent Gumbo posts here inspired me to take advantage of the cold and rainy weather to make some cold weather comfort food. "First you make a Roux!"

This was based on a basic Gumbo recipe found here https://www.foodnetwork.com/recipes/emeril-lagasse/chicken-and-smoked-sausage-gumbo-3645600

The main difference is that I used a super-rich home made chicken stock, and I cooked the Roux for at least 45 minutes until it was a very dark brown. Delicious!!!

Dang that looks good. That's one thing I've never made I'm gonna have to change that.
 
Looks great! I’m glad to finally not see someone shove some disgusting potato salad in their gumbo :p

Tell me about the Potato Salad!!! I lived in Louisiana from 1996 to 1999 and again in 2015 to 2016 and I have never seen Potato Salad in Gumbo! Some use File Gumbo Powder vs. Okra, but Potato Salad? YUCK!!!

I just saw the potato salad option in an online recipe last week....
