Default High Plains Spring Shenanigans - w/ Pron

Bosslady wanted brisket (and I didn't want to wrestle the one out of the deep freeze and try to thaw it). We compromised on beef short ribs.

A deeper trim than I've had to do before, and a good application of Adkins made this plate ready for the sauna.



Next thing I know, I've got a John Henry Apple Chipotle fatty in with the ribs, and a batch of wings in there, too.



Hope you folks are having beautiful WX like we are. High 70s. Open windows & spinning ceiling fans.

Almost time to turn on some NCAA Basketball for the afternoon.

Wish I'd snapped some photos of the plate.

BossLady brought home honeydew melon that we spritzed with lime and topped with prosciutto and I whipped up a batch of homemade GF Mac & Cheese (with good quality cheddar and some half & half).

Here's the meat:



I'm just about to completely agree with Bill about brisket vs. shorties.

Brisket with a handle rocks!

Sipping on an incredibly fine Aspall Suffolk Cyder that takes me right back to our "local" in Wicken, East Cambs... God, I miss that place...

Whew... man, I'm stuffed!
