Yogurt for bite through skin on chicken thighs

Has anybody used yogurt to successfully
get bite through skin on chicken thighs?
 
I've heard of mayo. Tried it. Didn't like it.
Not sure how yogurt would help.

I had some yogurt the morning I cooked some thighs like these, but I don't think it was completely to blame. :mrgreen: In all seriousness, are you talking about soaking your chicken pieces in yogurt, or cooking it whilst basting it in yogurt?

Never tried yogurt. I always achieved bite through skin by cooking longer. 10lbs chicken quarters at 275 for 3-3.5 hrs. Flip once midway. Tender bite through skin every time.
 
Thirdeye's butter chicken recipe also produces nice, bite thru skin. I love chicken skin.

Do you start with skin up or down?
 
I use yogurt in Indian/Med marinades all the time; I don't think it particularly helps with bite through skin. What does is obviously running hot and fast 275-325*F. Spray with a thick sugary soda like root beer if you want to help burn the skin.
