Cool sunday morning smoke

Well its early sunday morning so what better way to start than fire up the uds. I have a 14 lb brisket on the smoker already and will be adding a cilantro, fresh mozzarella and jalapeno stuffed fatty along with some jalapeno poppers. I cannot wait for dinner this evening!!! Hope everyone enjoys this wonderful day and smokes something great. Good day all!!!

Sounds like a great start to the day ! Did a lot of cooking yesterday and have a lot left over so probably just chill out and relax. Good luck on the cook !

Awesome, I just put a Butt on the drum. A little later than I wanted to (around 930am) but I took kid duty this morning to let the wifey sleep in. Keep us posted.

Well 4 hours in and the brisket is coming along nicely at 170internal so I wrapped it and back in the drum it went. The fatty is on and bathing in the smoke now and the poppers will go in the drum in about an hour. So far so good!!! My neighbor informed me he is coming for dinner since he has had to smell the pit since 5 am lol. I am going to turn the point of the brisket into burnt ends with cajun bbq sauce I received in the trade round so wish me luck with that. Thanks for the interest in my post.

Brisket point is cubed up and tossed in sauce and back on the drum now!!!

It's been too long since I've had brisket and yours is making me want it more.

Curious, I see the burnt ends are already cubed. Is the flat done and resting? Seems like a short cook.

Yes the flat was done and resting I had separated the point and flat before cooking. The brisket turned out amazing probably one of the best I have done. Bludawgs hot and fast method is my go to now and the only way I will cook my brisket from now on it is a 6 hour total cook time then my rest period in the cooler.
