A rib snack (3 bones) goes 5 and 6 dollars and we sell out!
We wanted to get our name going and did!
Will probably up our prices next year, so take a look around and see what your area will spend for good BBQ!
Thats exactly what I was thinking. Sell a good meal at a descent price....get your name out there, and build a client base. I also like the idea of selling out versus leftovers. (I'm not advocating undercutting the competition......just charging a fair price).

We sometimes set our prices according to the venue. When we are vending at the races at the Laguna Seca Raceway we charge a lot more for food. But then the racetrack charges us $2800 for a spot for a 3-day event. When we are vending for a festival in downtown Gilroy, a fairly small town, with local restaurants, and they only charge a couple hundred dollars to vend there, we don't charge nearly as much as at the races.
All that being said, we do try to sell at a good price, not overcharge, nor undercut other vendors.

Typical vending is $5 a sandwich, $2 to add beans, slaw or potato salad, pick 2. Going up to $6 next time out.

This weekend we gave it away at £2.00 for PP, burgers and bacon wrapped chicken. Beans were .50 pence and three ABT's for £1.00. Our prices could be considered low as far as the curve back home but BBQ and smoking is a new concept here so the goal was to get people trying something new and wanting more. We found that the ABT's were huge hit at the pub and we sold out the six dozen (144 halves)in an hour and a half. The profit on that alone kept us happy and now we have a standing order for them every Saturday.

In all fairness
2.00 GBP = 3.11 USD

Really ?? the pound is taking a serious beating right now. Things were great when it was at 1.9 and now it at about 1.5.
