Thumbs up Smokeing Brisket Tomorrow

I found a very good looking 'Choice' Packer Brisket this morning.
It's in the refrigerator, spiced and waiting for 0500.
I'm gonna torch my basket (UDS) at 0500 then put the meat on around 0530-0545AM. (I'm an early riser)
I plan to smoke at 240-250 Degrees, give or take...
I've got Pecan and Hickory soaking (a little while) for smoke.
Weather forecast for us is clear & hot... just another Alabama August.
I can't wait.

I've already forgot to make a before photo... Maybe I'll think of it in the morning before it goes in the UDS.

I just bought a 9 pounder at Costco and rubbed it down and is now in the fridge and will going on about the same time as yours.

Mine has more visible pepper over the rub. I've always thought that beef needs a little more pepper.
(What can I say, I'm a pepper-head)

I'm going to start my fire by lantern light in the morning.
I'm smoking under a giant Maple tree in my back yard, and Electricity's not that close.
I know it's impractical, but I get up early nearly everyday anyway.
Might as well fire off my UDS.
Here's to ya. May it be the best smoke ever.
