Hi, I'm new to the forum, but have been lurking for quite some time. I've been smoking (meat) for awhile, first on a Weber 22" kettle, then on an Akorn, most recently on a PK360-- and have been threatening the wife with a dedicated smoker for years. I'm the guy on my street who grills all winter in Minnesota. Just a hack at grilling though (albeit a high-volume hack)-- my beer-timer runs longer than medium-rare a bit too often.

Stumbled onto the site looking for UDS ideas. Finally got it built this year (just barely beat the start of kids' baseball and soccer seasons, or it would have been another year or two...) Haven't done a real smoke yet, just run an initial burn to season it and cure the paint, and threw some chicken on for the last couple hours. Early results are promising, though--came up to temp fast and held it like a champ... Just wanted to check in and say thanks for the resource-- lots of good ideas and information here!

White bread with BBQ? Generally approve.

It's more civilized than licking the plate.
Better texture than chewing the napkin.
Gotta be homemade, thick sliced though-- if it came in a bag from the gas station just use the napkin.
