Couple of Young Chickens....
We get young chickens at the local Winco for $0.97/lb. Thought I'd toss a couple on the pellet pooper tonight. Rubbed em' down with butter, salt, pepper, garlic, onion, rosemary, and thyme. Then stuffed sliced spicy linguica under the skin and sprinkled the top with Sucklbusters Bamm. I saw another recipe somewhere and they put Italian sausage under the skin. Thought the linguica would be a great substitute. Cooking with Pecan pellets, which I tend to like for beef and chicken. They are cooking at 275 and are sitting around 125 right now. Once they reach 165, I'll chop up and dig in. I'm hoping it comes out good.

All done. I think it will stay in the rotation, as it came out pretty darn good. The family really enjoyed it.
