“All Month Cinco de Mayo Feast” = Enchilada Verde con Pollo Again

Decided to make Chicken Enchiladas for Memorial Day. (One of my wife’s favorites) Started out making up the Verde sauce. Roasted most everything. (Corn in the back)



Tomatillos and onions go straight into the blender. Skinned and seeded the peppers and everyone into the pool for a spin.

Add the cilantro and lime juice and spin some more.



I had some left-over Chicken Fajitas that I wanted to use up, so I thawed them out.

While the rice and beans were cooking, I heated up the tortillas and pour myself a glass of Herradura Ultra Anejo.



I made up the enchiladas



and covered with some cheddar.

I took them out and put them on the Redhead at 350 degrees for 20 minutes.



Here they are plated up with some Elote, the rice, some savory black beans, a glass of Anejo and a Corona Light.

Another amazing cook and presentation! It almost looks too nice to eat....almost:heh: I would happily go in face first as soon as the last picture was taken. Very nice job!!
