Default Saturday late start Brisket and Ribs

One of the very few times I've started a cook when it's light out but hey, it's Saturday. The Trail Embers is fired up and after trimming a 15lb packer down to 10 (don't you love paying for fat) the smoke is rolling. 8am start at 250 degrees.

I usually don't put a Brisket on the cooker until 9-9:30, cook them at 300, they are usually done in 6.5hrs give or take and still have time to give them a couple hours to rest.

Looks like you are going to eat well tonight.

You have more motivation than me. I bought a prime packer from Costco specifically to smoke today. Several things have sapped my motivation. Now I'll be doing good if I get around to smoking a couple of tri tips. Enjoy!
