I haven't noticed or heard about being drier vs the 100. I do know that due to the convection fan you can either cook a little faster or drop cooking temps up to 20 degrees because of the convection action, like using a commercial convection oven in a restaurant. Maybe someone is not adjusting their workflow to compensate for the convection.

If you don't have a cookshack dealer, email Dave at cookshack, was hanging with him this weekend out at cookshack and he is a good guy. He will make sure you get the log burner with your cooker. [email protected]. Tell him tailgatejoe said hi.

Just completed my order for the Cookshack FEC 120. Got the stainless rack upgrades, meat probe option, extra shelves option (upgrade from 5 to 8 - alternative to the rib racks) and the log burner attachment. Two weeks to a big upgrade to our bbq life

I'm very happy I joined this forum. Already learning more than I was as a reader. Thanks again
