Smokin’ Turkey
Good evening my BBQ Brothers! For those that have served their Country; From one Vet to another Happy Veterans Day!
Now on to the topic. For the last couple of years I have smoked Turkeys for Christmas using Apple Wood. Apple is becoming very hard to find in the Greenville area in SC. I have a supplier of Hickory who also has a good batch of Pecan. I have not used Pecan but have had Brisket in Texas that was wonderful when cooked with Pecan. Before I go off the deep end and destroy aWhole Turkey, I was curious if anyone has used Pecan on aTurkey and the results? Thanks, Mark McLemore Leon’s BBQ Catering |

I like it on chicken, so I am sure it would be good on Turkey. Going to give you a little stronger smoke flavor than apple, but it is not as strong as Hickory.

You'll be fine with the pecan. I prefer it over hickory. Was never a fan of apple.

I’ve used both with turkey and loved the result.
I likely would not use mesquite with turkey, but pecan and hickory are good IMHO.

It really depends upon your personal taste preferences.
Turkey, like most poultry, has a lighter more delicate flavor. One does not want to lose the lighter flavor of the meat with an overpowering smoke flavor. The difference between a great turkey and a good turkey may be the type of wood you are using, and the amount of wood used. Because of this, careful consideration should be given to the type of wood you plan to use, as well as the amount of wood being used. |

I have used pecan for the last few years with turkey. I think you will like it. I prefer apple with pork. Pecan is a good all around wood. It's not over powering but gives a great flavor.
