Spatchcock and Panzanella!

This is an oldie but goodie in our family. It had been a while and I had a hankering for some spatchcock chicken. Look up panzanella salad on food network you won’t be disappointed. Roasted onions and peppers tossed with a fresh champagne vinaigrette with basil, fresh tomato and cucumber. Money! I grill everything and wifey puts it together. French bread grilled with olive oil and sea salt. Chicken marinated with herbs, lemon, vinegar and lots of garlic and oil....

Thanks fellas. Was delicious. Super moist. Pulled when breast was at 160 and rested for 20+ min. Skin thin and slightly crispy. Cook temp was around 350 give or take. Had the MIL over tonight bird got wiped out!

Stay tuned for tomorrow, it’s gonna be good:-D
 
I use imgbb.com - I have about 600 pics there on the free plan and haven’t hit any sort of limit.

That’s a nice looking bird too :clap2: the side salad sounds good too, I’m going to have to try that out...I always struggle with keeping the sides interesting.
