Anyone using a Backwoods smoker to cater on?
Any pros and cons would be much appreciated.

I'm moving to Florida in 3 weeks. The department that licenses food trucks said it doesn't have to be NSF approved. The smoker doesn't even have to be covered. You just can't cook small quick cooking items such as steaks or chops.
