Default Spares tonight

I had a wild hare and decided to do some spares today. Doing them at 275° on the LBGE with a 3-1-Sear method. Getting ready to foil now. The trimmings from the 3 racks made damn near a whole rack. Ate some and saving the rest for Keri C's beans at a later date.

Oh man! Those look like some nice meaty ribs! I love it when butchers cut ribs for ribs instead of cutting them for belly!

They were farkin' huge. Just a cryopak from Sam's Club, but the biggest one I've seen. I even picked the smallest cryopak I could find on Friday. All the others were even bigger.

They looked great, but only tasted OK (own worst critic mode). I don't think I like them cooked faster like that. I'm going back to 225°, 3-1.5-1.
