Onion-Celery-Garlic
Tablespoon Himalayan Salt
60 minutes IP
Move to 275* smoker a few hours

Good thinking on finishing with smoke. Quicker than smoking ox tails or ham hocks with all the added flavor

3:15 minutes simmering in smoke plus old State Fair Trick.was about twice as much hickory as I use on a regular meat smoke. Took on the perfect amount

I bet the smell drove the neighbors crazy. Although with the winds you suffer, we may have to ask Jeanie what it smelled like.

Haven’t looked. I let it cool somewhat, foiled and into coldest part of beer fridge. Bone broth lunch I’ll post a photo later today
