Default Anyone using a Backwoods smoker to cater on?

Yeah I know in Minnesota we need NSF equipment, well, we are supposed to have NSF equipment, I’m seeing more and more being allowed to not have to use commercial equipment.

I'm moving to Florida in 3 weeks. The department that licenses food trucks said it doesn't have to be NSF approved. The smoker doesn't even have to be covered. You just can't cook small quick cooking items such as steaks or chops.
