Default Q-Salt Spares on the Kettle

Home alone so I get to cook what I want.







I don't know why but when I pulled this out of the bag I immediately thought of Sir Mix-a-Lot, "I like Big Lump and I can not lie".



Threw a chunk of Cherry on the coals for smoke, going to let the grate temp climb to 300 throttle back the vents and roll from there, should be ready to pull in 3 hours give or take. Flap is going to the pups for a treat.



Time to sit back and relax, I'll give them a spritz in about 60.

1hr in grate temp rolling right at 300, I'll give it another spritz every 30min and probably flip them 2hrs in to keep the top of the ribs from getting too dark.

2hrs in grate temp dropped to 275ish, no biggie not in a hurry, time for the flip and pulled the doggie treats.

Tried the bend test at 3hrs in and they needed another 30min before they said no mas.

Money shots, one of these 3 are going in the throwdown and yes they were as good as they look.








Now you'll have to excuse me I have a Brisket to trim up for the morning.
