Default Pollo Poblano Pie

Pollo Poblano Pollo and Curry - The beginning

Roasting some poblano chiles, red bell pepppers, roma tomatoes and chicken thighs:



Grilling up nicely here...



The corn was grilled with husks on (no presoak), until they were black, then I peeled it back to caramelize some of the kernels....



Chicken almost done....



Meanwhile, back in the kitchen I built a lattice out of corn tortillas...





In two pie tins I placed more tortillas like so....




Filled them with the chicken, the pepppers,the corn, and the chiles, and a Mexican cheese mix...




Poured a milk/egg/ancho chili powder/salt mix into both. Covered one with a lattice...



Ready to go into a 350 degree oven for about 40-45 minutes...

What happpened to the tomatoes? That's another post....

Looks fantastic! And it would look really great in person.

Especially the first weekend of September.
