We are serving all day long 10 hours

They want 155 Pork Sando's
They Want 155 Brisket Sando's
They want 40 Chicken Sando's

I have the chicken covered.
But how much Pork and Brisket should I cook?
 
Assuming 6oz portions for the meat you'll need a little over 58 lbs. of each meat cooked.

Dang, you are serving all day to a trucking company and they only expect people to eat one sandwich? I think their order is way under what they will need, sides aside.

You were 100 percent right!

We were there all day and they were grabbing 3 to 5 sandwiches and hitting the road...... we made massive 6oz sandwiches and them boys can eat!!!!

My raw weights were
107 pork
110 brisket before trim
20lbs chicken


This made
144 brisket sandos
137 pork sandos
53 chicken sandos

Then he had 24 veggies Patties

We used 30lbs of coleslaw.
 
107 lbs of raw untrimmed brisket (then trimmed and cooked)
97 lbs raw pork

This should give you a 5oz edible portion per person for 155 of each.
